Sausage and Mushroom Stuffing

As a Diabetic it can be really hard to eat during the holidays. This year we planned very well and were able to maintain a low carb dinner for all of the Diabetics but still have a very healthy meal for the others. This is a stuffing recipe that I discovered many years ago. I can easily eat this for a meal by itself during the year.

Sausage and Mushroom Dressing

 

2 onions, thinly sliced
2-4 T. Olive Oil
4 cups of mushrooms (oyster or regular white mushrooms will do)
Salt and pepper
½ cups fresh chicken broth
2 tbsp. butter
2 lbs. turkey sausage
sage

Sauté the onions in olive oil over medium/low heat until caramelized for about 30 minutes. Turn up the heat and add the mushrooms. Sauté them until crisp around edges, about 10-15 minutes. Season with salt and pepper. Turn the heat on low and add chicken broth. Let this simmer for about 10 minutes. Then add the butter 1-tablespoon at a time until combined. Remove from heat and set aside. Brown the sausage in a separate pan. After it is cooked thoroughly add to the mushroom mixture along with the sage and combine thoroughly. Then, either stuff it in your turkey or bake like regular dressing.
