Roast Beef with Mushrooms

Before I had to eat low carb there was a local restaurant that served a sandwich that I just loved. I decided to attempt to create the filling for the sandwich and to eat it without the bread. It turned out that I loved it and it was very low carb. I hope that you enjoy it too.

Roast Beef and Mushrooms

 

1 small onion

3 tablespoons Olive Oil

8 ounces of sliced fresh mushrooms

1 small can of sliced black olives

¼ cup banana peppers

½ pound of Black Angus roast beef from the deli, shaved

Salt and pepper

1 cup mozzarella cheese

 

Place olive oil into a non-stick pan and add onions sautéing until slightly translucent. Add mushrooms and cook thoroughly. Add black olives, banana peppers, roast beef and stir until heated thoroughly. Add salt and pepper to taste. When it is heated add mozzarella cheese and stir until cheese is melted. Serve immediately.

 

You may also want to add green pepper or green olives as well.

  3. Just curious, is this a one serving recipe? I think my bunch would like this. They could eat it on buns and I would eat the filling.

    • This was a one serving recipe. Just multiply it to feed a family. My family eat it on the buns too. This way I am cooking one meal for everyone. :)
