
This was a hectic week and I am so glad that I had my meals planned for me. Had I not had enough items to prepare something I absolutely did not have time for any stops at a store to get them. Our leftovers stretched over a bit so we ended up with an extra meal leftover. Yayyyyyyyyyyyy. I love it when that happens.
I was a bit worried that my grocery bill would go over $40 this week since I needed some of my specialty items that I was running low on. Those can be a bit expensive. However, when all was said and done I only spent $39. I was shocked. To understand Specialty Items go here.

Tuesday- Pork Carnitas using this recipe. This was actually leftovers that I had put in the freezer when I made it earlier in the month.

Saturday- Leftover Blackened Chicken.
As you can see we will be eating very well. I took stock of my freezer and it looks as if I have another 27 days of meals using the meat that I stockpiled earlier in the month. This should last me at least 6 weeks since purchasing the meat. I am saving so much money by doing this. I will try to show my process in another post this week.
