Hearty Pork Shortribs

I have been a bad blogger this week. I have been so busy and having a wonderful time. On Monday I went out to dinner with two good friends. I still made the recipe that I had on my menu and Mike loved it. I did take one bite of it when I got home so that I would know if it were good enough to put on the blog. It is a keeper. Very light and tasty. I hope that you like it too.

Hearty Beef Short Ribs

  • 3 pounds of pork short ribs, bone in
  • 2 teaspoons of kosher salt
  • 1 Tablespoon black pepper
  • Shredded carrots- About 2/3 cup. I bought bagged shredded carrots
  • 2 celery stalks (I left them big and draped them over the meat. This way Mike could lift them off and I could still get the flavor)
  • 3 Tablespoons dried minced onion
  • 3 cloves garlic, minced
  • 3 bay leaves
  • 2/3 cup red wine
  • 2/3 cup canned diced tomatoes
  • 2/3 cup balsamic vinegar

Place ribs in crockpot. Top with kosher salt, pepper and dried onion. Top this with carrots and celery and add bay leaves. Mix remaining ingredients together and pour over top of ribs. Cook on low 8-9 hours until meat is tender and falling off of the bone.
