Steak Burritos

When I walked into the house after this had been cooking all day in the crockpot I was in heaven. This smelled so wonderful and the taste was even better. I will definitely be making this more often.

Steak Burritos

  • 1 red pepper- sliced
  • 1 yellow pepper- sliced
  • 1 orange pepper- sliced
  • 4 flank steaks
  • 1/2 cup taco seasoning or 2 packets
  • 1 4-ounce can green chilies
  • 1 medium onion- sliced into rings
  • 1 tablespoon vinegar
  • low carb tortillas
  • Monterey Jack cheese- shredded
  • sour cream or mayonnaise (I used mayonnaise)

In crockpot place all peppers in bottom. Season flank steak liberally with taco seasoning and lay on top of peppers. Place green chilies on top of steak and add onion on top of chilis. Sprinkle with vinegar. Place lid on crockpot and cook on low for 8 hours.

The meat will be falling apart and so tender. Take a low carb tortilla and put either sour cream or mayonnaise on it and top with cooked mixture. Roll into a burrito and enjoy. Serves 6.

You don’t have to worry about not having enough liquid in this. The vegetables release plenty of liquid to keep this from drying out while it cooks.

  1. This sounds so good! I wish my family liked peppers!

    • My husband won’t eat peppers either but he just picked out the meat and ate that. I didn’t mind partaking of the peppers all by myself. LOL
