Hamburger Cauliflower Skillet

I loved this recipe and it was so simple to make. I love one pan meals. This recipe also passes the freezer to work test. It reheats well without getting runny. When I took it to work with me this past week people kept walking past the office and asking what I was eating because it smelled so good. :)

I put the cauliflower and carrots into the food processor together with the chopping blade until it resembled rice.

Hamburger Cauliflower Skillet

  • 1 pound ground beef
  • 1 can chicken broth
  • 2 medium carrots, chopped in food processor
  • 1 medium head cauliflower, chopped in food processor
  • 1 envelope dry onion soup mix

In a large non-stick skillet add ground beef and cook until no longer pink, drain grease. Add chicken broth and dry onion soup mix. Stir well. Add carrots and cauliflower and cook uncovered, stirring often until vegetables are tender. Remove from heat and serve immediately. Serves 6.

    How much is a serving?

    • It has been awhile since I made it but I remember using the rubbermaid sandwich containers to put it in for lunch and it filled 6 of them. Does this give you an idea?
