Garlic Lemon-Pepper Chicken

Mike and I LOVED this recipe and it will be made often here. My entire house smelled of garlic and it was so worth it. :)

I found this recipe originally online and then I tweaked it to make it much easier for me and to lower the carbs. I found the original recipe here.

Original Recipe

Garlic Lemon-Pepper Chicken

  • 3 pounds chicken breast tenders
  • 1 cups coconut flour
  • 1/2 cup lemon juice
  • 5 Tablespoons prepared minced garlic
  • pure olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon white pepper
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2-3 teaspoons dried parsley
  • powdered lemon peel
Place coconut flour in a plate and dip chicken breast tenders lightly coating all sides. Heat approximately 1/4 cup olive oil in the bottom of a non-stick skillet. When it is hot add garlic and saute for 2 minutes. Add chicken on top of the garlic and allow to cook 4-5 minutes without turning. When you do turn the chicken the chicken will be browned and the garlic will be stuck to it. 
Next mix the dry spices together and sprinkle half of them over the top of the chicken. After the chicken has had time to cook for 4-5 minutes turn again. Top the chicken at this time with the remaining mixed herbs.  Sprinkle top of chicken with lemon juice and cook with 2 minutes longer.

Serves 6-8 as a main course.

    • This really was good. I told a co-worker about it and she made it for her family and they all liked it. She has 5 kids and none of them realized they were eating healthy. :)

  2. What is powdered lemon peel? I’ve never seen that before.

    • It is in the spice aisle. It is dehydrated lemon peel. You can also buy orange peel that way too. It really comes in handy. :)

  3. i made this and it was wonderful i didnt have the lemon peel powder i bought lemon peel …but i since have purchased the powder now i will make it again
