These were very good and it made so many that we had them for several days. These were good the first day but they were even better when reheated the second day. I found this recipe online and modified it to suit our low carb needs. It does have a small amount of bread crumbs but not enough to alter the carb count too much. If you want to omit the bread crumbs you can but it only adds one carb per serving so I left them in. I hope that you enjoy these as well.
Sloppy Joe Meatballs
- 2 eggs. beaten
- 1/2 cup dry bread crumbs
- 2 Tablespoons minced dried onion
- 1/2 teaspoon oregano, dried
- 2 pounds lean ground beef
- 2 Tablespoon cooking oil
- 2 15-ounce cans tomato sauce
- 5 Tablespoons Brown Sugar Twin, granulated
- 2 Tablespoons prepared mustard
- 2 teaspoons chili powder
- 1/2 teaspoon black pepper
- 2 garlic cloves
- 1/2 teaspoon salt
Heat oven to 350 degrees. Combine egg, bread crumbs, onion, and oregano in bowl. Add the ground beef and mix well. For into meatballs that are about 1 inch in diameter. Place on baking sheet that has raised sides to hold grease from running off of pan. Bake for 25-30 minutes or until no pink remains. Drain well.
Meanwhile, cook remaining ingredients a large saucepan. Bring to a simmer and cook for 5 minutes. Pour sauce over cooked meatballs and serve immediately. Makes 10 servings.
