Rosemary Lime Chicken Salad

We loved this chicken. It was so tender and smelled so wonderful on the grill. This was a very quick and easy meal to prepare. I have to show you a picture of the chicken before I cut it up to go on the salad.

This is when in the salad but without the salad dressing.

How about some low carb salad dressing?

This was a very filling meal and I was able to include my much-needed veggies into the meal too. Of course you know Mike had his chicken without the salad. GRRRR

I bought the fresco cheese at Aldi’s. The package said it was a crumbling cheese and perfect for salads and they were right. It was easy to shred and it is a very mild flavor that goes well with most salads.

Rosemary Lime Chicken Salad

  • 4 boneless chicken breast halves
  • 2 Tablespoons vegetable oil
  • 1/2 cup Chardonnay
  • 1/3 cup lime juice
  • 2 tablespoons fresh rosemary or 2 teaspoons dried rosemary, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • spring salad mix from store- 1 large bag
  • cucumber finely diced
  • roma tomato finely diced
  • fresco cheese- bought at Aldi’s

Flatten chicken to 1/2 inch thickness. In a large ziploc baggie add vegetable oil, chardonnay, lime juice, rosemary, salt and pepper. Add chicken and return to fridge to marinade all day while at work.

Heat grill and place chicken on non-stick foil over medium heat for 5-7 minutes each side or until juices run clear.

Remove from heat and cut into bite size pieces. Create your salad with the remaining ingredients and place chicken on top. Serves 4.
