Breakfast Pizza

This is a quick breakfast recipe that I threw together. I estimated mine to have around 6 carbs in it. You have to figure out your own depending on what veggies you add to it. The options are endless.

Breakfast Pizza

  • low carb tortilla
  • 2 eggs, slightly beaten
  • ham and turkey that has been shaven from the store deli
  • small amount of finely chopped onion
  • olive oil- 2 teaspoons
  • salsa
  • cheddar cheese

In a small 6 inch pan add olive oil and saute onion until tender. Add beaten eggs and throw in the chopped ham and turkey. Once the eggs have cooked on one side gently flip to cook other side to keep the egg in the shape of the pan. Add cheddar cheese to top of egg while bottom is now cooking.

Place tortilla on the plate. Top with desired amount of salsa. When eggs are cooked place on top of tortilla.

You could also add black olives, sour cream, roasted red peppers, etc… your options are endless.
