Blackberry Waffles

Berries are rampant right now and we have to use them. Can you hear my dentist screaming? The stains the stains. Oh well. What is a woman to do? These were very good. I had bought the waffle iron about two weeks before I became a diabetic and it had remained unused in the closet for the past two years. These were very good and I am sure that I will use it again to make these and other flavors of pancakes. With Davinci sugar free syrups the possibilities are endless.

Waffles with Blackberries

  • 3 Tablespoons Vital Wheat Gluten
  • 2 Tablespoons Heavy Whipping Cream
  • 1 Tablespoon vegetable oil
  • 1/2 teaspoon baking powder
  • 1 teaspoon Splenda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon McCormick’s Orange Peel

Mix all ingredients together and pour onto hot griddle. Once done remove to plate. Top with 1/4 cup blackberries and a dollop of whipped cream.

I ate mine with Mrs. Butterworth’s Sugar Free syrup. I figure that with the blackberries and syrup it came to about 16 carbs total.
