Cabbage Patch Stew

This recipe was very good. I can see myself making it again in the fall when the leaves are falling and there is a chill in the air. With the cheese in it is very filling and I was shocked that Mike actually ate a couple of bowls of even though it has veggies in it. Although he did pick out much of the cabbage. Oh well at least he did have some veggies without killing over from shock. 🙂

Cabbage Patch Stew

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 medium head of cabbage
  • 2 14-ounce cans of diced tomatoes
  • 2 cups of pinto beans or a 16 ounce can
  • 1 can of Rotel tomatoes (original)
  • 1/2 cup low carb ketchup
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • Shredded cheddar cheese
  • Sour cream- optional

In large skillet, cook the ground beef and onion over medium heat until meat is no longer pink and onions are tender. Drain.

Transfer to crockpot. Stir in the all but cheddar cheese and sour cream. Cover and cook on low for 6-8 hours or until cabbage is tender. Serve with lots of cheddar cheese and sour cream if desired.

This is a very spicy soup because of the Rotel tomatoes and I really needed the cheddar cheese to take the bite out of it.

Serves 8.

  1. I love your website. It has really encouraged me to have more variety in my meal planning.
    I tried this recipe tonight and my husband and I both loved it. These are ingredients that I keep on hand all the time, so it didn’t even require a special trip to the grocery store. This will be a regular on my menu from now on. I felt like I was eating chili, but the cabbage made it a much wiser choice for me as a diabetic.
