Roasted Cauliflower

After realizing that Mike liked cauliflower a couple of weeks ago I was determined to make more of it. What he had eaten was a frozen mixture that costs an arm and a leg and I knew that making that on regular basis would break the bank. I am trying new recipes.

I wish that I could say that Mike enjoyed this one but he didn’t. I, however, loved it and ate the entire dish myself. I hope that you give it a try.

Roasted Cauliflower

  • 2 Tablespoons minced garlic
  • 3 Tablespoons olive oil
  • 1 large head of cauliflower, separated into florets
  • 1/2 cup parmesan cheese
  • salt and pepper to taste

Preheat oven to 450 degrees. Grease a casserole dish.

Place cauliflower in casserole dish. Mix garlic and olive oil and drizzle over cauliflower. Turn to coat. Bake for 25 minutes stirring halfway through. Sprinkle with parmesan cheese and return to oven for 5 minutes. Serve immediately.
