Salsa Pot Roast

Mike and I really loved this one. I even took it for lunch one day and it was very filling. It was very easy to make and I can see us having it again. It would also be good shredded and put into low carb tortillas with lettuce, tomato and cheese. yumm!!

Salsa Pot Roast

  • 2 1/2- 3 pound roast of your choice
  • 16 ounce jar salsa- I used medium flavor
  • 8 ounce can tomato sauce
  • 2 garlic cloves, minced
  • 2 Tablespoons Sugar Twin Brown Sugar Replacement
  • 1 Tablespoon soy sauce
  • 1 14-ounce can tomatoes- I used a pint of tomatoes that I had canned

Place roast in bottom of slow cooker. Pour remaining ingredients over top of roast. Cook on low for 8 hours. Serves 8.

Nutritional Information: Calories-534.9, Carbs- 7.2 grams (Fiber- 1.4 grams, Sugars- 2.5 grams)= comes to 3.3 net carbs.
