I made these Sunday and I am enjoying them for other meals as well. I hope to take some of them to work with me this week too. Of course Mike didn’t eat the veggies but that is too be expected. 😛
I first grilled hamburgers with just salt and pepper and while they were on the grill I made the topping.
Doesn’t this look good? My house smelled wonderful while this was cooking. I need smellavision for this. 🙂
You will need to make a seasoning mix that I keep on hand at all times. It is wonderful for any meat or vegetables that you may want to stirfry.
- 1 teaspoon splenda
- 1 teaspoon salt
- 1 teaspoon garlic powder,
- 1 teaspoon dried thyme
- 1 teaspoon lemon pepper seasoning
- 1 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
Mix in a container and seal tightly. Keep in dry place. Use on vegetables or just about any meat.
- 2 pounds ground beef- grilled into 6 burgers
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 orange pepper, sliced
- 2 medium onions, sliced
- 8 ounces Portobello mushrooms
- 3 cups mozzarella cheese
- seasoning mix to taste.
- olive oil
Add a little bit of olive oil to a pan and heat. Add onions and cook for a bit just until you see them wilt a bit. Then add the peppers. Cook until almost done and then add the sliced mushrooms. Cook for another 5 minutes. Add seasoning mix to taste and stir. Add mozzarella cheese and replace lid. Set pan aside to allow cheese to melt.
Place burgers on a plate and then top with vegetables and cheese mixture. Serves 6.
