Tamale Pie

I loved this recipe. Mike wouldn’t even try the breading on the top once he learned it had wheat bran in it.  He did eat the filling with his usual high carb side dishes and I had mine as it is.  I gave it the three-year-old test and it passed with flying colors.  Caleb loved it and said it was as yummy as tacos. 🙂

I have to give a disclaimer here. The breading was too thick on this and I am making it smaller in the recipe so ignore the picture as being precise.

Tamale Pie

  • 1 pound ground beef
  • 1 pound sausage with sage
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1 (14-ounce) can tomatoes
  • 1 (6-ounce) can tomato paste
  • 1/4 cup black olives, sliced
  • 1 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 cup cheddar cheese, shredded

Breading-

  • 8 ounce package cream cheese
  • 5 eggs
  • 1 cup almond flour
  • 1/2 cup wheat bran
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon paprika

In a non-stick skillet cook ground beef and onion until thoroughly cooked. Drain. Add remaining ingredients for filling except cheese and stir well. Heat for 5 minutes.  Pour into 13X9 inch pan.  Top with all half of cheese.

Using mixer beat the cream cheese. Scrap down sides of bowl and add 2 eggs. Mix well. Add remaining eggs one at a time scraping down sides of bowl each time. Add remaining ingredients and mix well. Pour over top of meat mixture and bake at 325 degrees for 30 minutes or until fork inserted in center of breading shows it is done.  Top with remaining cheese and return to oven for 3 minutes to melt cheese. Serves 8.

  1. Atkins talked about wheat bran…. but I haven’t had much of it all since the whole gluten/wheat thing came up.
