Guisado De Consuelo

This is another recipe that I had to make in 2 pans. One for Mike with the things that he wants in it and one for me making it healthy and low carb. I made this recipe as it was on a website and Mike loved it. You can find the high carb recipe at this link. Guisado De Consuelo high carb version.

After changing it a bit I was able to make this version of it for me and it was delicious. Doesn’t this look wonderful?

Guisado De Consuelo

  • 1 medium head of cauliflower- finely chopped
  • 2 tablespoons oil
  • ½ cup chopped onion
  • ½ green pepper, chopped
  • 1 lb ground beef
  • 2 teaspoons beef bouillon granules
  • 1 ½ cups salsa (medium)
  • 1 ½ cups water
  1. In a large frying pan, saute onion and bell pepper until limp.
  2. Add ground beef and cook until crumbled and brown.
  3. Add cauliflower to the pan, and add bouillon, salsa and water.
  4. Reduce heat and let simmer uncovered for about 35-45 minutes until thickened, stirring occasionally. Serves 6
    Nutritional information: Calories- 278, Carbohydrates- 8.34 (fiber- 2.35, sugars- 3.88)
