Zesty Chicken with Cauliflower

This was very good. I accidentally chopped the cauliflower too finely and it resembled mashed potatoes instead of rice. I think next time I won’t chop it int he food processor but will instead cut it by hand to have chunks of cauliflower instead. Despite what the recipe looked like it tasted very good. I froze it into single serving containers and froze to take to work with me. It went very well from freezer to lunchbox to microwave without changing taste or texture. I really liked this one.

Zesty Chicken with Cauliflower

  • 2 boneless chicken breasts cut into one inch pieces
  • 2 Tablespoon olive oil
  • 1 large bell pepper, coarsely chopped
  • 1 medium onion, chopped
  • 1 28 ounce can tomatoes, do not drain
  • 3 cups coarsely chopped cauliflower
  • 1 package taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 1/2 cups cheddar cheese, shredded

In a saute pan saute onion and green peppers in olive oil until onions are almost translucent.  Add chicken and cook until juices run clear from chicken. Add remaining ingredients except cheese and cook until cauliflower is cooked tender. Add water if needed. Add cheese and stir until melted. Serves 4.
