Creole Seasoning Meatloaf

On Saturday, Caleb spent the day with us and I made this new recipe. However, when it came time to eat I totally forgot to take a picture of it for the blog. We all loved the recipe and I can see me making this more than my other meatloaf recipe because it is just as good and lower in carbs. Yay!!

Creole Seasoning Meatloaf

  • 2 pounds lean ground beef
  • 5 teaspoons creole seasoning (not Cajun seasoning)
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 6 slices bacon
  • 2/3 cup low carb ketchup

In a large bowl mix first 3 ingredients and form into oblong loaf form in a 9×13 inch pan. Top with bacon slices and then with ketchup. Bake at 350 degrees for 75 minutes. You will have small black areas on top of the meatloaf. If you remove this from the oven before the black areas form your meatloaf will not be cooked entirely in the center. Serves 8.
