This recipe was unbelievably good. This was so easy to make and I can see me making this often. I tried to get Mike to at least try it but he wouldn’t of course because he won’t eat vegetables. Don’t worry. He had something else to eat.
Roasted Cauliflower with Sausage and Tomatoes
- 1 large head cauliflower
- 1 pound sausage
- 1 onion, finely chopped
- 1 teaspoon garlic
- 1 14.5 ounce can diced tomatoes
- 1 15 ounce can tomato sauce
- 1 Tablespoon balsamic vinegar
- 1 Tablespoon red wine vinegar
- olive oil
- salt and pepper
- chili powder to taste- (I love chili powder so I added about 5-6 Tablespoons)
Preheat oven to 400 degrees. Chop cauliflower into bite size pieces and place in large baking dish. Coat in 2-3 Tablespoons olive oil and add salt and pepper to taste. Place in oven and bake for 30-40 minutes turning every 15 minutes until lightly roasted and tender.
In a skillet crumble sausage and add onion. Fry until sausage is no longer pink and onion is translucent. Drain grease and add garlic. Stir well. Stir in tomatoes, tomato sauce and vinegars. Add chili powder to taste and stir well. Simmer 5 minutes to blend flavors. Remove from heat.
Remove roasted cauliflower from the oven and pour sauce over the top and mix well. This could be served with cheese but I did not find a need for it. It was perfect as is. Enjoy.
