I promised you all that I would share my cold lunch ideas for eating low carb. This week I am taking chicken salad in my lunch and this is one way to eat it. I cored and sliced a tomato and opened it like a flower. I put the chicken salad into the center of it. This was very good. 🙂
I also took cucumber and carrots and had ranch dip to go with them. I added a low carb cherry yogurt and a sugar free jelly cup to round out the meal.
