This weekend seemed to go by in a blur. I had a wonderful time with family and I hate to see it end. Caleb spent the night last night and today we cooked dinner together. He is such a sweet smart young man and I love spending time with him. Tonight for dinner I made a new recipe that we both loved. When his Mom came to get him she tried the wings and said she loved them too.
Sweet Ginger Chicken Wings
- 3 pounds chicken wings
- 1 cup butter
- 1/2 cup apple cider vinegar
- 1 cup low carb brown sugar <–click for recipe
- 3 Tablespoons Soy Sauce
- 3 Tablespoons water
- 1/2 teaspoon sea salt
- 2 Tablespoons fresh grated ginger
- 1 1/2 teaspoon crushed red pepper seeds
Dry chicken wings. In a large frying pan melt butter and when hot place the chicken in the butter and cook until golden brown- approximately 10 minutes. Move chicken to a large baking dish and set aside.
In a saucepan mix remaining ingredients and bring to a boil. Cook until thickened, approximately 3-5 minutes. Drizzle half of mixture over the chicken and place chicken in a 350 degree oven for 30 minutes, basting with remaining liquid after 15 minutes. Serve hot. Serves 6.
