Caleb spent the day with me and we made this new recipe. We both really liked it and it was very easy to make. I will definitely be making this one again. I am so blessed that Caleb will try new things. I served it with Roasted Brussels Sprouts with Parmesan and Mashed Cheddar Cauliflower (another new recipe). I will share the Cauliflower recipe soon.
- 4 large pieces cod
- 4 teaspoon mayonnaise
- 4 teaspoons carbmaster vanilla yogurt
- 1/2 cup parmesan cheese
- 1/2 teaspoon dill weed
- pepper to taste
- 1 clove garlic, minced
Preheat oven to 350 degrees. Lightly butter an 8 X 8 baking dish. Press cod between towelings to remove excess water. Place cod in baking dish. Mix remaining ingredients and spread on top of cod.
Bake for 25 minutes and then place under broiler to lightly brown topping. Allow to sit for 5 minutes before serving. Makes 4 servings.
