This is a simple lunch box idea. I am doing items that won’t require heating since I am working out of my car tomorrow. Packing a lunch is so much easier when you prepare everything the night before. This will be my lunch tomorrow.
I made a salad by buying a premixed cut blend of spring lettuces. I bought roasted turkey breast out of the deli and had them shave it. Next I bought a wedge of Sargento’s Bruschetta Jack cheese and shredded it to go on top.
I also bought Opa Greek Yogurt Ranch Dressing for the first time. I am very pleased with it.
I bought this cute little bowl that has a lid with a fork and a small container for the salad dressing. Isn’t this cute? I bought it at Aldi in a 2 pack.
I also will be having a small amount of mixed nuts as a snack and strawberries as a snack. This will all go into a cute little thermal insulated cooler to stay on track while I work.
I had everything to make these lettuce wraps and just threw it together today for my lunch. I loved this and will make this a regular staple in my lunch menus.
Ham, Avocado, Egg Salad
- 4 hard boiled eggs, chopped
- 8 cherry tomatoes, sliced
- 1/2 cup chopped ham
- 1 avocado, chopped
- 3/4 cup mayonnaise
- 1/4 teaspoon celery salt
- ground pepper to taste
- lettuce leaves
Mix all ingredients except the lettuce leaves together in a bowl. Serve wrapped in lettuce leaves. Serves 3.

I am going to be posting a few low carb lunch ideas for people who do not have access to a microwave with their job. This is what I have been experiencing and it is possible to maintain a low carb diet but you need to plan ahead.
This week I have made a large bowl of Broccoli Salad to take for my lunch. I am adding a side of strawberries to go with it too. I have learned to keep an Atkins shake and a low carb protein bar in my cooler just in case I end up working late or feeling my glucose level is dropping too low. Being prepared keeps me from making poor choices while on the road with my job.
I bought a new 31 brand insulated cooler to take my lunch in. I keep 2 20ounce reusable bottles of orange flavor sugar free drink. I buy the Walmart brand called Early Orange Rise. This is my favorite flavor. As most of you know I do not buy paper towels or paper napkins so I always keep a cloth napkin in my cooler and one in my glove box of my car just in case I need an extra one.
I promised you all that I would share my cold lunch ideas for eating low carb. This week I am taking chicken salad in my lunch and this is one way to eat it. I cored and sliced a tomato and opened it like a flower. I put the chicken salad into the center of it. This was very good. 🙂
I also took cucumber and carrots and had ranch dip to go with them. I added a low carb cherry yogurt and a sugar free jelly cup to round out the meal.
I have had a request to do some low carb lunch ideas for people who can’t reheat their foods at work. I am also working in the field and having to eat out of a lunch box 3 days a week so I am experiencing the same problems that you are. This is one way that I stayed low carb and had a healthy lunch and kept my glucose level down to normal. 🙂 That is our goal right?
For my lunch this week I had left over Dr. Pepper Pot Roast in a nice salad that included cheese, mixed salad greens, portabella mushrooms and banana pepper rings. I had Hidden Valley Creamy Parmesan dressing to go with it. I also enjoyed a low carb cherry yogurt and a diet A&W Rootbeer.
For snacks for the day I also took Emerald Cocoa Roasted Almonds, sliced pepperoni and Sargento Cheddar Cheese sticks.
I haven’t shared my lunch with you lately so here goes. On Mondays and Wednesday we are in the office at work and I am able to take food that I can heat in the microwave. On these days I often take leftovers. This week I took the following and everyone kept telling me how great it smelled while I was eating it. It was just as delicious as it smelled.
When I used to make this before eating low carb I served this over mashed potatoes. Well potatoes are no longer an option so I served this over cooked cauliflower and it was just as good.
The meat is my Pizza Potroast recipe.

- Cauliflower- 3 carbs
Total carb count- 11.53 Net Carbs
I haven’t shared my lunches for awhile so I thought I would show what I took last week for lunch. I made the Cauliflower Sausage Casserole and enjoyed yogurt and jello parfait which came to a total of 12 carbs for the meal. I put all of the casserole into single serving size portions and placed them in the refrigerator. The next morning I only had to grab one, a yogurt and a jello parfait. It really took the stress out of my mornings and I was able to stay on track and eat low carb.
