Once again this isn’t my recipe so I will share the link under the pic. My pic isn’t glamorous or fancy. The recipe makes a single serving of almost a quart of shake so I just used a mason jar to drink out of. I had it for breakfast this morning and it was so good that I worried that it would spike my glucose. When I tested two hours later my level was only at 90. I will make this often! I found it in the Trim Healthy Mama cookbook but it is also available at the link below. I highly recommend getting the Trim Healthy Mama Cookbook. I am getting fabulous recipes out of it and my glucose is staying close to 100 with each meal.
Thin Mint Chocolate Chip Shake Recipe
I made this today after coming home from listening to a friend play in a local band. Whitestone Redemption played on top of a local restaurant that is located next to the river and it was hot but the band was wonderful. I am so glad that I was able to go. It was nice to chat again. The man playing the white guitar and his wife used to work with me at one of the nursing homes where I worked as a Social Worker.

The only change that I made to it was to use Splenda instead of Swerve as I do count the sugar alcohols in my carb count and 33 carbs from the sugar alcohols do effect me and spike my glucose. It was a wonderful cold drink to relax and cool off after returning home.
For those who have been with me on Facebook you know where I have been the last 2 weeks. I have been studying for my WV Insurance Exam so that I can become an insurance agent. I was able to pass my test on Tuesday and plan to start a new career next week. I will be working closer to home and am excited about this new adventure in my life.
I shared this recipe on Facebook a couple of weeks ago but have used all of my time studying for the test so I haven’t been posting on the blog but I am back and have a couple of recipes to share now. This is the first one.
This can be considered either a smoothie or a mousse.
- 5-6 medium size strawberries, sliced
- Heavy Whipping Cream (roughly 1/2 cup to 3/4 cup)
- 2 Tablespoon Splenda
- 1 teaspoon pure vanilla
You will need to pull your blender out for this one. Place strawberries, splenda and vanilla in the bottom of the blender. Add the Heavy Whipping Cream until strawberries are slightly covered. Turn blender onto high and allow to blend until the mousse in the blender gets a shiny look to it. The mousse will be very thick and sweet.

This is a recipe that I have been making for years. It is a lot easier to make if you begin with using crushed ice instead of ice cubes. My old blender worked better at making this but it is still good. If you have a kitchen aid blender you shouldn’t have any problems with getting the ice to blend at all.
1/4 c. heavy cream
1/4 c. water
2 T. Sugar Free Pudding Mix Powder (Your choice of flavors)
6 ice cubes
Place all ingredients in blender and blend till ice is crushed completely.
HINT: 1T fudge and 1 T. banana cream is wonderful!
Makes 1 serving 3 carbs each
