Weekend With Caleb

Caleb spent the weekend again. This time he brought a lego car and tow truck kit that I bought him for Christmas and we put it together. It took about 2 1/2 hours and he is really growing up. He didn’t want to give up and stuck with it the entire time. Just look at this sweet face!

While he was here we ate very healthy and he was so happy with all of the options. We made low carb fajitas and fresh strawberries for dinner last night. Tonight I am making a Pepper-Crusted Roast Beef and Roasted Brussel Sprouts for dinner. I am also making Paleo Rye Bread to eat during the week and Broccoli Salad for my lunches. I want to bring back my low carb lunch ideas that I used to post. These will center around packing a lunch where having a microwave is not an option as this is what my reality is at this time.

This week I will be making 2 new recipes that I hope to share next weekend. Wish me luck!



I have been trying to figure out why I allowed myself to gain weight during the divorce, new job, move to a new home, etc… I weighed myself daily so nothing was a surprise but yet it wasn’t enough to make me stop. I love Netflix and I began watching the series Lost that was on a few years ago. I had never seen it so I watched it from beginning to end. There was one particular episode where Hurley was meeting with his psychiatrist. Hurley was overweight and he was quite depressed following an accident where a deck that he had been standing on collapsed resulting in the death of 2 friends. His counselor pointed out that following the accident that Hurley stopped speaking and sleeping, but never eating – because that is how he punishes himself.

I stopped right there and thought of this for a bit and came to the realization that I am punishing myself. I have been punishing myself for 2 years. I realized that this needs to stop. I am going back to the basics and doing my meal planning. I did that on this board so I am going to return to doing them on the board each week. If I stop I want someone to call me on it and ask how I am doing. 😛

So here we go.

Sunday- leftover Salisbury Steak with Onion Gravy, mashed cauliflower, roasted brussel sprouts

Monday- Cream of Tomato Soup with Basil (I will also take this for my lunches)

Tuesday- Pepper Crusted Roast Beef, mashed cauliflower, broccoli salad

Wednesday, Thursday and Friday- I will make fajitas using the leftover pot roast

Saturday and Sunday- Low Carb pizza

My Weekly Menu For 11/11/2012

I had a very good week. I worked 6 days this week and I was very blessed to have Mike make the chili for me one night when I was working late. I love this man. 🙂 I had told him that I wanted to cut back a bit more on the carbs since I am not getting the opportunity to exercise as much as I had been. He made it for me without the beans and I didn’t miss it all. 🙂

I am planning 2 new recipes this week that I will be sharing with you next week. I have 2 new recipes that I will be sharing this week. They turned out to be very good and I am sure that I will be making them again. 🙂

I was in Walmart yesterday and happened to see a wonderful tribute to the Veterans in our areas. The Junior ROTC from the local high school attended and participated in the tribute. It was so moving to see them respectfully honoring those that have sacrificed so much for this country.

After work yesterday Caleb came to spend the night. He is growing up so fast and was so funny. We cooked Salmon Patties and it was amazing how much food one little boy can put away. I am so happy that he loves eating healthy. He had broccoli, carrots and cauliflower and asked for more. I have to laugh at him. Those that follow me on Facebook know that I am addicted to a TV show called The Walking Dead. Caleb and I discuss zombies and he understands that they are not real. The following conversation occurred with his dad when he came to pick him up.

  • Caleb: If you see a zombie you can only kill it by hitting it in the head. You shouldn’t shoot it with a gun because other zombies in the woods will hear it and come to eat you. You need to use a crossbow. We need to buy crossbows. (All said with a huge smile on his face)
  • Daddy: I think you are spending too much time with Grandma! hahahahaha

Caleb woke up this morning with a big smile on his face. He sleeps with me when he stays over and Mike moves to the couch. We have a guestroom but Mike prefers to sleep on the couch instead. We had breakfast of bacon, scrambled eggs and fresh strawberries. For lunch he requested a snack tray instead of lunch. For him that means crackers, cheese, pepperoni, fresh fruit, fresh veggies and yogurt. He cleaned his plate he enjoyed it so much.

Now that I have shared my weekend with you I will continue with the weekly menu. For our dinners this week we will have the following.

My Weekly Menu For 11/4/2012

Last week was a whirlwind with work,  Hurricane Sandy, snow, Halloween and a million other things.  We lived on leftovers all week and I was so blessed to have Mike cook burgers one night. I promised to make him some comfort foods this week so you all will be getting new recipes. Yay!!!

I want to give a follow-up for our week. My grandson’s were both superheros for Halloween. Caleb was the Incredible Hulk and his momma works at the same school as he attends so she dressed up too. She was a very girlie clown.

I think they are both adorable!!

Isaiah enjoyed his first Halloween and even though he couldn’t enjoy the candy he was a very happy Superman!

I just have to share another picture of Isaiah that is just too cute. He loves books and he put this one on his head and left it for several minutes just peeking out at his parents.

Now I will share my weekly menu with everyone. For breakfast this week I am having Blackberry Muffins that Caleb helped me make last week. For lunch I will have salad with chicken in it.

Our dinners will consist of the following:

  1. Blackened Chicken– I made this tonight and used chicken tenders instead of bone in chicken. Caleb loved this so much that he had 7 chicken tenders. 🙂
  2. left over Blackened Chicken
  3. Mixed Bean Taco Chili– I have to be careful with this one and be sure to exercise on the day that I eat this to prevent it spiking my glucose.

My Weekly Menu For 09/30/2012

I know that I have been a very bad blogger for the past couple of weeks. I am just enjoying myself and my new job and working hard to learn how to sell life insurance. We have a financial advisor on staff to assist with protecting people’s retirement and help them invest wisely. I do love my job and I get to meet some wonderful people this way too.

I have already typed two new recipes to post this week so you can expect to see the first one in the morning. 🙂

I just got through making enough Triple berry muffins to last me 4 weeks for my breakfast. My home smells heavenly. I freeze 3 dozen and keep the other dozen in my fridge to enjoy during the week. 🙂

For dinner this week we will be having the following:

  4. left over meatloaf
  5. Buffalo Wings
  6. left over wings

My Weekly Menu For 9/2/2012

I spent the afternoon with Caleb floating on a raft (bed) while he protected me from sharks (pillows) and building a barn (legos) and making cupcakes that were not low carb. Thankfully he took them all home with him. 🙂

It was a wonderful day and I will cherish these memories forever. We grilled T-Bone Steaks on the grill for dinner and had fresh strawberries for dessert. I will be spending the day tomorrow with my mother and sister making jewelry and bonding over beads and jewelry findings. We are going to have salads with baked chicken in it and I will be making Strawberry Mousse for our dessert.

This afternoon I made 4 batches of Blueberry Muffins and froze 3 of them. I have breakfast made for a month. Yay!!

This week I am making 3 new recipes and I will be sharing those if we like them. Wish me luck.

My Weekly Menu For 7/29/2012

Last week I didn’t have to cook as often as I thought I would so I will be making this week some of the items that I had chosen for last week.  My week was stress free were food was concerned last week. I wish other areas had been as stress free. I seem to thrive more when my life is hectic though.

Last weekend I made 4 batches of Zucchini Pecan Muffins so my breakfast is taken care of. I just have to pull a dozen out of the freezer and I am set. 🙂

This week we will have the following:

  1. Creole Meatloaf- new recipe that I made yesterday and we loved. I will be sharing it on Thursday.
  2. Spicy Chicken Chili- new recipe to come
  3. left over Chili
  4. Beer Braised Beef Short Ribs- new recipe to come
